The Rise of The Fermenstation: Bringing Simple Kombucha Brewing to Your Home

Kombucha, the effervescent fermented tea that has quietly brewed its way through history, is now bubbling over in popularity as more folks seek gut-friendly drinks. But let’s face it, enjoying this fizzy delight at home can be a pricey affair, and the traditional DIY route? Well, it’s often a messy, complicated, and space-hogging endeavor. Enter the Fermenstation, a sleek solution from San Francisco-based startup Kombu, which made waves at CES 2025 with its promise to simplify the kombucha-making process.

  • Streamlined brewing process
  • Temperature-controlled system for consistency
  • Visually appealing design
  • Companion app for remote control

“I had been brewing kombucha for years, but one day, Natalia pointed out that my setup was far from aesthetically pleasing. It was a mess,” shared Michael Churchill, Kombu’s CEO.

The brains behind Kombu are husband and wife team Michael Churchill and Natalia Amijo. Both alumni of the Art Center College of Design, their diverse backgrounds span automotive innovation and virtual reality. Their shared vision was born out of Churchill’s cumbersome home brewing setup—a scene familiar to many kombucha enthusiasts. The duo decided to craft a solution that marries functionality with sleek design.

Traditional home brewing demands multiple steps—boiling tea, cooling it down, adding sugar, and waiting for fermentation—all while monitoring flavor changes in open containers that invite unwanted bacteria. The Fermenstation streamlines this process into a user-friendly experience. It controls temperature between 75°F and 85°F to ensure consistent fermentation results, tackling one of the biggest challenges in traditional brewing.

Kombu’s device is not just about performance; it also boasts a high-end aesthetic resembling a water dispenser—perfect for those who prefer their kitchen counters clutter-free. The sealed environment it creates minimizes contamination risks. Plus, with its handy app, you can control everything remotely—from setting timers to receiving brew updates.

Kombu’s journey began with a Kickstarter campaign in August 2024, which drew in 305 backers and exceeded its $25,000 goal by reaching nearly $105,000. Available for pre-order at $360 (with future retail pricing at $500), it’s set to ship across the U.S. and Canada between April and June. While the investment might seem steep compared to basic brewing supplies, it promises savings long-term as you’ll only need essentials like tea and sugar.

Looking ahead, Kombu aims to expand beyond kombucha by offering more fermented foods and accessories. Their vision is to make Kombu synonymous with modern fermentation and gut health.

“Our ultimate goal is to establish Kombu as a household name in modern fermentation and gut health,” Churchill concluded.
